
This salad is a lovely summer treat...
bursting with color and sensational flavors.
It is so easy to make and ever so gourmet!
I have served it as a buffet salad for 40
or as a plated dinner entree for 4.
Nectarine Salad
with grilled Chicken &
Blue Cheese Crumbles
4 servings
5 cups spring mix
1/2 cup blue cheese crumbles
2 grilled chicken breasts
2-3 nectarines ~seeded and sliced
Dijon Dressing
3/4 cup red wine vinegar
1/4 cup lemon juice
3 T. sugar
2 tsp. minced garlic
1 1/2 cup extra virgin olive oil
2 tsp. good dijon mustard
Place in blender, blend all ingredients till smooth.
Season with salt and pepper~ if needed.
Place all ingredients in salad bowl. (for buffet)
Toss with the desired amount of dijon dressing, and serve.
Or~ toss greens with desired dressing and plate.
Layer~ sliced chicken & peaches on top in
a pretty circular pattern..... drizzle with a little extra
dijon dressing and sprinkle with creamy blue cheese.
