A nice sustaining breakfast of eggs
is a lovely way to start one's morning.
This (egg scramble) combines some
scrumptious ingredients....
fresh eggs, cream, goat cheese and chives.
These eggs pair nicely with a little something sweet too...
such as cinnamon rolls, coffeecake or breakfast puffs...
{yes, most definitely breakfast puffs!}
French Breakfast Puffs, fresh from the oven...
{Prior to being rolled
in butter and cinnamon sugar}
~The Recipe~
3 cups Flour
3 teaspoons Baking Powder
1 teaspoon Salt
½ teaspoons Ground Nutmeg
1 cup Sugar
⅔ cups Shortening
2 whole Eggs
1 cup Milk
1-½ cup Sugar
3 teaspoons Cinnamon
2 sticks Butter
Preheat oven to 350 degrees. Lightly grease 12 muffin cups.
In a large bowl stir together flour, baking powder, salt, and nutmeg. Set aside. In a different bowl, cream together 1 cup sugar and shortening. Then add eggs and mix again. Add flour mixture and milk alternately to creamed mixture, beating well after each addition. Fill prepared muffin cups 2/3 full. Bake at 350 degrees for 20-25 minutes or until golden. In a bowl, melt 2 sticks butter. In a separate bowl combine remaining sugar and cinnamon. Dip baked muffins in butter, coating thoroughly, then coat with cinnamon-sugar mixture. {recipe courtesy: "The Pioneer Woman"}
Note: These puffs are best served
warm.... right out of the oven!
Now, unto the eggs...
Simply start by whisking in a large bowl...
1 1/2 teaspoons kosher salt & 3/4 tsp. black pepper.
Heat 2 T. butter in a large saute or omelet pan.
Add the eggs and cook them until the desired doneness, stirring constantly.
Crumble 6 oz. of goat cheese
and finely chop a couple of tablespoons of fresh chives...
Off the heat, add the 6 oz. of the crumbled
goat cheese, 2-3 T. chives,
and 2 tablespoons more butter.
Stir and allow the eggs to sit for 30 seconds,
until the cheese begins to melt.
Check for seasoning. Serve hot.
... Enjoy!
